Cervenia scoverzi, Romanian fried flatbreads

Cervenia scoverzi are small, yeasted flatbreads fried in oil, with a soft center and golden edges. The simple dough is stretched by hand, and the 16 pieces turn out fluffy, just as good plain or filled with salty cheese and egg. I especially love watching them puff up in the pan. Prep: 20 minutes. Cook: 37 minutes. Rest: 30 minutes. Total time: 87 minutes. Servings: 16. About 190 kcal and 5 g protein per serving.
Ingredients
- 20 g fresh yeast
- 1 teaspoon sugar
- 500 g flour
- 400-450 ml warm water
- 1/2 teaspoon salt
- 500 ml oil for frying
Preparation
1. Rub the yeast and sugar together until the yeast liquefies. Add 30 ml warm water and 20 g flour, stir until you have a sour cream-like paste, then cover and leave to rise for 10 minutes. 2. Sift the remaining flour into a bowl and mix it with the salt. Put the yeast mixture in the middle, gradually pour in 370-420 ml warm water and stir. Use as much water as the flour needs, then knead on a floured work surface until the dough is smooth and no longer sticks to your hands. 3. Cover the dough and leave it to rise for 20 minutes, until it doubles in volume. Divide it into 16 pieces and place them on a cloth, in the order you will fry them. 4. Stretch each piece by hand until it reaches the size you want. 5. Heat the oil in a wide pan for 5 minutes and test it with a small piece of dough. Shake the excess flour off the first piece, put it in the oil and make a hole in the middle with a fork. Fry each scovergă for about 1 minute on each side, until golden.
Notes
For the filled version, mix salty cheese with egg; the dough contains gluten, and the filling contains dairy and egg. Keep the scoverzi in a closed container in the fridge for up to 3 days; if you stack them while hot, they soften. The smallest, thinnest ones fry faster, while thicker ones need a gentler heat. If the dough sticks to your palms, grease them with a little oil instead of working in a lot of flour. I serve them plain, while they are still a little warm, with black tea.
Frequently asked questions
Can I use dry yeast?
Yes, replace the 20 g fresh yeast with 7 g dry yeast and activate it according to the package instructions.
What should I do if the dough does not double in volume?
Leave it for another 10 minutes in a place that is about 26°C; in a cool room, the yeast may work more slowly.
Can I replace some of the white flour with whole wheat flour?
Yes, replace no more than 100 g of the flour with whole wheat flour and start with the lower end of the water range.
