350-400 g fresh carp roe
350-400 ml sunflower oil (ideally of good quality)
100 ml mineral water
1/2 lemon (just the juice)
3 green onions

Preparation method

1. If using fresh roe, mix it with half a teaspoon of salt and let it chill in the fridge for 1-2 days. If the roe is store-bought, check the saltiness before adding more salt – usually, it’s not necessary.

2. Place the roe in a deep bowl. Start mixing it on low speed for 2 minutes, only in one direction. Do not change the mixing direction during this time, as it may curdle.

3. After 2 minutes, gradually add the oil in a thin stream, continuously mixing in the same direction. Don’t rush with the oil; it’s important to incorporate it gradually. If the mixture starts to become too thick, stop and move to the next step.

4. Every few minutes, pour in a small shot of mineral water, mixing gently after each addition. You don’t need to use all the water, just enough to lighten the color and achieve a more airy texture. Usually, three shots are sufficient, but you can stop at the consistency you like.

5. Once you’ve finished adding the oil and the texture is fluffy, gradually pour in the lemon juice, mixing each time. Taste and see if you need more salt.

6. Finally, chop the green onions into small rounds and gently mix them into the salad.

7. The fish roe salad can be served immediately, but if you have time, let it chill a bit. It’s tastier after resting.
