Appetizers are essential for any party, bringing a touch of flavor and joy to our tables. Whether it's a family gathering, an anniversary, or a simple get-together with friends, a well-thought-out platter of appetizers can transform any event into a true celebration. In this recipe, I will share some of the most appreciated appetizers, each with its own story and preparation technique, to help you impress your guests.

Total preparation time: 1 hour
Cooking time: 0 minutes (all recipes are cold)
Number of servings: 8-10

Ingredients:

Platter of stuffed tomatoes with cream cheese:
- 10 cherry tomatoes or medium tomatoes
- 200 g cream cheese (Philadelphia type)
- 50 g butter (at room temperature)
- 2 tablespoons of fresh dill, chopped
- 2 tablespoons of fresh parsley, chopped
- Salt and pepper to taste

Mini skewers with ham and cheese:
- 200 g ham (preferably homemade for a more intense flavor)
- 200 g cheese (a matured cheese that cuts easily)
- 100 g green or black olives (pitted)
- Cookie cutters (optional)

Pepper boats with fish roe:
- 2 bell peppers
- 200 g fish roe (preferably carp or herring)
- Lemon juice (optional, for a fresher taste)

Other appetizers:
- 4 boiled eggs (for stuffed eggs)
- 150 g beef salad (made from boiled vegetables and meat)
- 150 g roe salad
- 150 g cauliflower salad

Step by step:

1. Platter of stuffed tomatoes with cream cheese:
- Preparing the tomatoes: Cut off the top of the tomatoes and carefully scoop out the insides using a teaspoon.
- Preparing the cream: In a bowl, mix the cream cheese with the softened butter. Add the chopped dill and parsley, season with salt and pepper, and mix well.
- Stuffing the tomatoes: Using a teaspoon or a piping bag, fill each tomato with the cream cheese mixture. Arrange them on a large platter and decorate with fresh parsley leaves.

2. Mini skewers with ham and cheese:
- Cutting the ingredients: If you have cookie cutters, use them to cut the ham and cheese into attractive shapes (hearts, clovers). If not, cut the ingredients into cubes or rectangles.
- Assembling the skewers: On a toothpick, alternate pieces of ham and cheese, then add an olive at the end. Continue until all ingredients are used.
- Serving: Arrange the skewers on a platter and, if desired, drizzle with a little olive oil and pepper.

3. Pepper boats with fish roe:
- Preparing the peppers: Cut the peppers into quarters lengthwise and remove the seeds.
- Stuffing the peppers: Use a spoon to fill each boat with roe.
- Serving suggestion: Drizzle with a little lemon juice for a fresh note.

4. Other appetizers:
- Stuffed eggs: Boil the eggs for 10 minutes. Peel them, cut them in half, and remove the yolks. Mix the yolks with mayonnaise, mustard, and spices, then fill the egg whites with the mixture obtained.
- Beef salad: Made from boiled vegetables (carrots, potatoes, peas) mixed with boiled meat (usually beef) and mayonnaise.
- Roe salad: Mix the roe with oil, lemon juice, and finely chopped onion until you get a creamy paste.
- Cauliflower salad: Boiled and chopped cauliflower mixed with mayonnaise and spices.

Useful tips:
- Variations: You can experiment with different types of cheese or roe. You can also add your favorite spices or herbs.
- Presentation: A well-arranged platter can work wonders. Use fresh herbs as decoration and season with olive or balsamic oil for an extra flavor.
- Ingredient care: Choose fresh ingredients for a better taste. Tomatoes should be firm and ripe, and the cheese should be of high quality.
