The hunter's bag

Appetizers - The hunter's bag by Mirela P. - Recipia

The hunter's roll is the kind of dish I've made many times for gatherings with friends or family. I love it because it doesn't require expensive ingredients or complicated techniques, and it easily adapts if you have leftovers in the fridge. I usually assemble it quickly, pop it in the oven, and let it do its thing while I take care of other tasks. Quick Info Total time: approx. 1 hour Preparation time: 20-25 minutes Baking time: 30 minutes Servings: 8-10 slices Difficulty: easy Recipe type: appetizer roll, suitable for platters or a hearty breakfast Ingredients 400 g flour 1 packet baking powder (10 g) 150 g lard (butter, oil, or margarine can also be used, but lard gives the flakiest dough) 2 tablespoons sour cream 1 tablespoon salt 2 eggs 100 g smoked neck 100 g cheese 100 g ham sheep cheese (about 50-70 g, to taste) ketchup (about 2-3 tablespoons, just enough to add a bit of flavor) 1 egg for brushing the roll A little oil or butter for greasing the pan Instructions 1. In a large bowl, mix the flour with the baking powder and salt. 2. Add the eggs, lard, and sour cream. Initially mix with a spoon, then with your hands, until you obtain a fairly firm, non-sticky dough. If it’s too tough, you can add a little more sour cream. 3. Roll out the dough on a floured surface into a thick sheet about 1 cm thick. 4. Cut the smoked neck, cheese, and ham into thin slices or strips. 5. Place the smoked neck on the dough first, followed by the cheese and then the ham. Distribute pieces of sheep cheese over them. Drizzle a few teaspoons of ketchup over the filling, being careful not to overdo it so that the dough doesn't get soggy. 6. Carefully roll it up, not too tightly, so the filling doesn't spill out. Seal the edges as well as you can. 7. Transfer the roll to the greased pan. 8. Beat an egg and brush the roll all over for a nice color. 9. Bake in a preheated oven at 180°C for 30 minutes, until golden brown. 10. Remove the roll onto a rack or cutting board to cool, then slice. Why I make this recipe often I love it because it doesn't take much time, the ingredients are easy to find, and the flavor is rich and savory without being heavy. It's great for packing, parties, or on a platter when you want something easy to share. It holds up well even the next day. Tips and Variations Tips - Knead the dough just enough to combine; it shouldn't be worked too much. - If using butter or margarine instead of lard, I prefer them to be cold and cut into cubes. - The roll should be well brushed with egg before baking for a golden crust. - Don’t put too much filling at the edges to prevent it from spilling out when rolling. Substitutions - Lard can be replaced with 150 g of butter or margarine, but the texture will be slightly different. - Sour cream can be substituted with full-fat yogurt. - Other leftover cold cuts or cheeses can be used for the filling. - If you don't want ketchup, you can skip it altogether. Variations - For a stronger flavor, you can add a little pepper or paprika to the filling. - You can add slices of bell pepper or green onions if you want some vegetables. - If I don’t have sheep cheese, I use salty cheese made from sheep's milk. Serving Ideas - It can be sliced and served on platters with other appetizers. - I sometimes serve it for breakfast with tomatoes or pickles. - It can be packed for a trip or to the office. Frequently Asked Questions 1. Can I prepare the dough a day in advance? Yes, you can keep it in the fridge wrapped in plastic wrap and roll it out the next day, but not longer than 24 hours to prevent it from getting too tough. 2. What should I do if the dough is too soft? If it’s too sticky, add a little extra flour until it reaches a firm consistency. Don’t overdo it with flour to avoid making it too tough after baking. 3. Can the roll be frozen? I don’t recommend freezing it after baking because the flaky dough gets soggy and loses its texture. Freezing the raw dough works if needed. 4. What can I use instead of sheep cheese? Hard, salty telemea cheese can replace sheep cheese, but the final taste will be different. 5. Can it be made without meat? Yes, you can skip the neck and ham and use more cheese, but it won’t be as filling. Nutritional Values Approximate for 1 slice (out of 10): Calories: ~220 kcal Protein: 8-10 g Carbohydrates: 18-20 g Fat: 12-15 g These values are approximate and depend on the type of cold cuts and cheeses used and how much fat the sour cream has. Storage and Reheating The roll keeps well in the fridge, wrapped or in a container, for up to 3 days. A slice can be quickly reheated in the oven or skillet over low heat, but it’s also good cold. I don’t recommend freezing it after baking because the dough becomes wet and loses its flakiness.
