Raffaello Cake – simple recipe with fluffy base and coconut cream I have made this Raffaello cake several times when I had something to celebrate at home. The Base Start with the base so it has time to cool. Separate the eggs. Whip the egg whites with a pinch of salt, using a mixer, until they no longer fall from the bowl. Gradually add the sugar and continue mixing until you achieve a stiff and shiny foam. Mix the egg yolks separately with the oil, as for mayonnaise. Pour it over the egg white foam and gently fold it in from the bottom up with a spatula. Mix the flour with the baking powder and sift it directly over the mixture. Stir everything slowly, just until combined, without beating or insisting. Prepare a round cake pan with a diameter of 20 cm. Grease it with a little butter or oil and sprinkle with flour. Pour the mixture and level it. Bake in a preheated oven at 175°C. Do not open the oven door at all for the first 15 minutes. After 25-30 minutes, check with a toothpick – it should come out clean.
