Shrimp Doughnuts

Peeled shrimp are a delicacy that adds a touch of flavor to any dish. We start by boiling fresh shrimp in salted water for about 3 minutes, if you haven't already purchased the pre-cooked ones. This boiling step is essential as it helps to intensify the flavors and cook them evenly. After boiling, let them cool slightly so you can work with them. In the meantime, we prepare the batter. In a deep bowl, we mix a beaten egg with a cup of dry white wine, add water and oil. These ingredients will give a subtle taste and pleasant texture. Once we have a homogeneous mixture, we gradually add flour, stirring continuously to avoid lumps. Salt is added to taste, ensuring that the batter will be sufficiently seasoned. The final consistency should be similar to that of a pancake, but much thicker, so that it evenly coats the shrimp. In a deep frying pan or a fryer, heat the oil until it becomes hot. It is important to check the oil temperature, as a temperature that is too low will cause the shrimp to absorb too much oil, while a temperature that is too high will burn them. Once the oil is ready, take each shrimp and dip it in the prepared batter, making sure it is well coated. Then, carefully drop the shrimp into the hot oil. Fry the shrimp until they become golden and crispy, a process that should take about 3-4 minutes, depending on the thickness of the batter and the oil temperature. When ready, remove them with a spatula and place them on a paper towel to absorb excess oil. These fried shrimp can be served as an appetizer, accompanied by mayonnaise or ketchup, but they can also be mixed with a sweet and sour sauce to create a delicious main dish, alongside fragrant rice.
