Peasant Soup with Pork and Vegetables

Once you have completed this step, portioning the meat is essential; I recommend cutting it into medium-sized pieces so that it cooks evenly. Place the meat in a large pot, adding about 2 liters of cold water and a teaspoon of salt. Cover the pot and put it on medium heat. In the first few minutes, when the water begins to boil, it is important to remove the foam that forms on the surface to achieve a clear and tasty soup. Let the meat boil for about 45 minutes, during which it will infuse and release its flavors. Meanwhile, you can take care of the vegetables. Peel the bell peppers, onion, carrots, and potatoes. The color and texture of the vegetables will not only add a wonderful taste but also an appealing look to your soup. Cut the bell peppers into small cubes, chop the onion finely, and you can grate the carrots or chop them using a food processor. The potato, on the other hand, should be cut into appropriately sized cubes. In a frying pan, add a little oil and heat it well. Sauté the vegetables for 5-7 minutes, stirring constantly to prevent burning. This step will intensify the flavors and add a special taste to your soup. After the vegetables have been sautéed, add them to the pot with the meat and boiling water, making sure to distribute them evenly. It is important to let the vegetables boil together with the meat for about 10 minutes before adding the potato. This will require less cooking time, so adding it later will ensure that it does not fall apart during boiling. Season the soup with salt and pepper to taste, considering that each ingredient contributes to the flavor. In the last 5 minutes of cooking, add the rice noodles, which will cook quickly, becoming delicious pearls in the soup. Finally, sprinkle fresh or dried tarragon, which will provide an irresistible aroma and a note of freshness to your dish. Once all the ingredients are well cooked and the flavors have melded together, turn off the heat. The soup can be served plain or with a spoonful of sour cream, which will add a pleasant creaminess.
