We start by preparing the ingredients for a delicious and nourishing soup that will bring a touch of warmth on cooler days. The first step is to take care of the vegetables. We finely chop the carrot, onion, and celery, using either a sharp knife or a grater, depending on preference. This step is essential to achieve a uniform texture that will contribute to even cooking.

In a large pot, we heat the oil over medium heat, adding a pinch of salt to help the vegetables release their flavors. We sauté the chopped vegetables for about 5-7 minutes, stirring constantly until they soften and become translucent. This process not only enhances the taste but also intensifies the aroma of the soup.

Once the vegetables are ready, we add water or vegetable broth, prepared in advance to enhance the flavor. We let the mixture simmer over medium heat, covering the pot with a lid, until the vegetables are fully cooked and flavorful. This step can take between 15 and 20 minutes, depending on the size of the vegetables.

After the vegetables have boiled, it’s time to add the diced tomatoes. These will bring a note of acidity and freshness to the soup. We let everything simmer together for another 5 minutes, during which the flavors will combine harmoniously.

Finally, we add the tortellini, choosing a type that we like, and let it cook according to the instructions on the package. Usually, this step takes between 3 and 7 minutes, at which point the tortellini becomes fluffy and absorbs the flavors of the soup.

Once we turn off the heat, it’s time to add the finely chopped fresh herbs, which will bring an extra splash of color and freshness. Don’t forget to grind a little fresh pepper on top to enhance the flavors.

This soup can be customized to your liking by adding any preferred vegetables, whether fresh or from frozen mixes, such as peas, green beans, cabbage, or shredded spinach. Enjoy a warm and comforting meal, perfect for any time of the day!
