Veal Soup with Borscht - A Traditional Recipe Full of Flavor

Veal soup with borscht is a classic recipe, lovingly cooked by many generations. This soup is not only nourishing but also comforting, bringing a touch of warmth on cooler days. Veal, fresh vegetables, and a splash of borscht combine to create a delicious dish, perfect for any occasion. Whether it's a family Sunday meal or a lunch with friends, this soup will surely impress!

Preparation time: 30 minutes
Cooking time: 1 hour
Total time: 1 hour and 30 minutes
Servings: 4-6

Ingredients:
- 600-700 g veal (ribs, shank pieces, marrow bone)
- 2 medium carrots
- 1 bunch of green onions
- 1 tablespoon of rice
- 3-4 liters of water
- salt, to taste
- borscht (approximately 500 ml, adjust to preference)
- 50 ml oil (sunflower or olive)
- fresh lovage, for serving
- 1 egg (optional, to thicken the soup)

Step-by-step preparation:

1. Preparing the meat: Start by washing the veal well under cold running water. Choose pieces with a decent amount of fat to achieve a rich and flavorful soup. Place the meat in a large pot and cover with 3-4 liters of water. Add a tablespoon of salt to season the meat.

2. Boiling the meat: Bring the water to a boil and skim off the foam that forms on the surface with a ladle. This step is important for achieving a clear and appetizing soup. Once it starts boiling, reduce the heat to medium and let it simmer for about 1 hour. Veal is tender and cooks faster, so there is no need to boil it for too long.

3. Preparing the vegetables: In the meantime, peel the carrots and dice them. The green onions should be finely chopped to blend harmoniously into the soup and add extra flavor.

4. Sautéing the vegetables: In a pan, heat 50 ml of oil over medium heat. Add the carrots and green onions and sauté for 5-7 minutes until they become slightly translucent and fragrant.

5. Finalizing the soup: Once the meat is well cooked, remove it from the pot and cut it into small pieces. Don't forget to remove the marrow from the bone and add it to the meat. Return the meat to the pot with the broth, then add the sautéed vegetables and rice. Let everything boil together for another 15-20 minutes until the rice is cooked.

6. Adding the borscht: When the rice is cooked, add the borscht to taste. Everyone prefers the soup either more sour or less sour, so adjust the amount of borscht according to your preferences. Let the soup come to a boil, then turn off the heat.

7. Final serving: Add the chopped fresh lovage and, if desired, beat an egg and gradually add it to the soup while stirring continuously to avoid lumps. This will give the soup a creamier texture. Serve the soup hot, with fresh lovage sprinkled on top. Although I personally do not prefer sour cream, many add it for extra creaminess.

Useful tips:
- If you want a spicier soup, you can add a few slices of hot pepper to the sautéed vegetables.
- The soup can be stored in the refrigerator for 2-3 days and can be easily reheated. The flavor intensifies after a day, making it perfect for cooking in advance.
- You can replace veal with chicken or turkey for a lighter and less fatty version.

Nutritional benefits:
Veal soup with borscht is rich in proteins, vitamins, and minerals. Veal contains less fat compared to other types of red meat and is an excellent source of iron, essential for hemoglobin health. Carrots add beta-carotene and antioxidants, while borscht aids digestion and has beneficial effects on intestinal flora.

Frequently asked questions:
- Can I use pork instead of veal? Of course! The soup will have a different taste, but it is just as delicious.
- How can I make the soup more sour? Add more borscht or the juice of a lemon, depending on your preferences.
- What can I serve alongside this soup? Fresh bread, polenta, or a green salad are excellent accompaniments.

Personal suggestion: My story with this soup begins in childhood when my mother would prepare it on weekends. Its aroma reminds me of the days spent together at the table with family. That’s why, when I cook it, I don’t just do it to nourish myself, but also to reconnect with dear memories.

Try this veal soup with borscht recipe and let the flavors and tastes bring you a sense of well-being! It’s time to start cooking and impress your family and friends with this delicious recipe!
