Boil leftover meat and bones from the day before, a traditional method that not only reduces food waste but also provides a rich flavor base for various dishes. Start by gathering all the meat scraps you have on hand: they can be from chicken, pork, or beef. Place them in a large pot, along with the bones left over from previous meals. Add enough water to cover the ingredients, then bring to a boil. Have a skimmer handy, as you will need to remove the foam that forms on the surface, an essential step for achieving a clear and delicious broth.

Once the broth begins to boil, reduce the heat and let it simmer slowly, allowing the flavors to develop gradually. After about 30 minutes, you can start removing the foam with the skimmer, ensuring the broth remains clear. Now is the time to add the vegetables that will enrich the flavor of the soup. Carrots, which we know add sweetness and vibrant color, should be peeled and cut into large pieces. Onions will also be added whole, as they will break down over time, releasing their delicate flavors.

At this stage, add whole peppercorns for extra flavor and a little salt, being careful not to overdo it, as both the meat and bones may already contain salt. Let the broth simmer on low heat for another 2-3 hours, until the meat becomes tender and easily pulls away from the bones. It is important not to rush this process, as the long cooking time will extract all the nutrients and flavors from the ingredients.

Once the broth is ready, take it off the heat and let it cool slightly, then strain the liquid through a fine sieve to remove all solids. You can keep the meat separate to use later in various dishes, such as a salad or risotto. The resulting broth is now of stunning clarity, with a rich and comforting flavor, perfect to be served as is or as a base for other delicious recipes. You can also add fresh herbs, such as parsley, before serving for an extra touch of freshness.
