Chicken and vegetable soup

Soups - Chicken and vegetable soup by Andra N. - Recipia

Chicken breast simmers whole before you cut it up, giving this chicken and vegetable soup a broth with plenty of chicken flavor. Carrots, peas and mushrooms make it filling, and tomato paste gives the broth its color. I serve it hot, with parsley sprinkled on top. Prep: 15 minutes. Cook: 58 minutes. Total: 73 minutes. Serves: 4. About 300 kcal and 28 g protein per serving.

Ingredients

  • 400 g chicken breast
  • 1 medium onion (150 g)
  • 1500 ml water
  • 3 mushrooms (75 g)
  • 1 tablespoon olive oil
  • 75 g frozen peas
  • 2 medium carrots (240 g)
  • 100 g pasta
  • 1000 ml water
  • 1 teaspoon salt
  • 1 teaspoon Vegeta
  • 1/4 teaspoon white pepper
  • 2 tablespoons tomato paste
  • 10 g fresh parsley

Preparation

1. Put the chicken breast and whole onion in a pot with 1500 ml water. Bring to a boil, then simmer for 20 minutes, until the chicken is cooked through. 2. Meanwhile, thinly slice the mushrooms and cut the carrots into rounds. Heat 1 tablespoon olive oil in a pan and sauté the mushrooms, peas and carrots for 5 minutes, until they soften slightly. 3. Take the chicken breast out of the pot and discard the onion. Cut the chicken into cubes and return it to the soup with the vegetables from the pan. Cook the pasta separately for 8 minutes in 1000 ml water with 1 teaspoon salt, then drain it and add it to the pot. Add 1 teaspoon Vegeta and 1/4 teaspoon white pepper. Simmer the soup for 15 minutes, until the carrots are tender. 4. Add 2 tablespoons tomato paste and simmer for another 10 minutes. Sprinkle with chopped parsley before serving.

Notes

For a gluten-free version, use 100 g gluten-free pasta; regular pasta contains gluten. I didn't have fresh parsley on hand, but I sprinkle it on top when I do. A slice of toast goes well with the soup. A thicker chicken breast may need a few extra minutes, while a thinner one cooks faster. Choose firm mushrooms with dry caps and no sticky spots. You can replace the frozen peas with 75 g fresh peas and add them to the pot along with the carrots. If you increase the quantities, keep the same proportions of water and seasoning. The soup keeps in the fridge for up to 3 days; store the pasta separately, since it absorbs the broth. When reheating, add a little water if it has thickened.

Frequently asked questions

Can I use thighs instead of breast?

Yes, put 700 g bone-in chicken thighs in the pot and simmer for about 35 minutes, until the meat comes easily off the bone.

What can I use instead of mushrooms?

Use 75 g zucchini cut into cubes and add it to the pot during the last 6 minutes of simmering the vegetables.

Why does the broth turn cloudy?

The foam that forms at the beginning can make it cloudy. Skim it off with a spoon during the first 5 minutes after it starts to boil.
