Welcome to the culinary world of vegetable pilaf! This simple and quick recipe is sure to become a favorite side dish for your meals. The delicious flavors and vibrant appearance make this dish a perfect choice for any occasion. Let's get started!

Ingredients:
- 200 g rice (preferably long-grain rice for better texture)
- 1 medium onion
- 1 large carrot
- 1 broccoli (approximately 300 g)
- 1 small can of corn (approximately 200 g)
- Salt, to taste
- Pepper, to taste
- 2-3 tablespoons of olive oil or sunflower oil

Step 1: Preparing the ingredients
Start by rinsing the rice well under cold running water to remove excess starch. This will help achieve a less sticky pilaf. Peel and finely chop the onion. The carrot can be grated or diced, depending on your preference. Wash the broccoli and cut it into small florets.

Step 2: Sautéing the onion
In a medium skillet or pot, add the oil and heat over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. You will notice the aroma of sautéed onion filling your kitchen!

Step 3: Cooking the rice
Add the rinsed rice to the skillet and stir well for 1-2 minutes to coat it with oil and flavor it. Then, add water, making sure to use three times the amount of rice (approximately 600 ml). Add salt and pepper to taste. Cover the pot and let it simmer over medium heat. When the water starts to boil, reduce the heat to low and let it cook for 15 minutes or until the rice absorbs all the water.

Step 4: Preparing the vegetables
While the rice is cooking, blanch the broccoli florets in boiling water for 2-3 minutes, then drain and rinse them with cold water to stop the cooking process. This step will keep the vegetables' vibrant color and crunchy texture.

Step 5: Assembling the dish
Once the rice is ready, remove the pot from the heat and let it sit covered for 5 minutes. Then, using a fork, fluff the rice to give it a fluffy texture. Place the pilaf on a large platter, spreading it evenly. On top, add the grated carrot, broccoli, and drained corn from the can.

Step 6: Serving
For an extra flavor boost, you can drizzle a bit of olive oil and a squeeze of lemon juice. This will enhance the flavors and provide a pleasant contrast. Vegetable pilaf is served warm and can be a perfect side dish for any main course.

Possible variations:
- You can add other vegetables, such as peas or bell peppers, for extra color and nutrients.
- If you desire a more intense flavor, you can add spices like turmeric or curry during the rice cooking process.

The vegetable pilaf recipe is not only tasty but also healthy, making it an excellent option for a vitamin-packed meal. I hope you enjoy this recipe as much as we did! Bon appétit!
