In a pan, we heat the oil, and when it becomes hot, we add the chopped garlic and zucchini strips. We fry everything for about 3 minutes until the zucchinis become slightly soft, then we remove the pan from the heat.

Now, let’s take care of assembling the lasagna. We take a smaller baking dish and put a thin layer of pesto on the bottom. We then place half of the "noodles" of zucchini, followed by a generous layer of grated cheese, as much as we desire, to achieve a rich flavor. We cover this first part with another layer of pesto. We continue with the second half of the zucchini noodles, repeating the process of adding cheese and pesto, and at the end, we sprinkle breadcrumbs, which will provide a delicious crispy crust.

The lasagna is ready to be taken to the preheated oven at 180°C. We let it bake for about 25-30 minutes, or until a golden and appetizing crust forms on top. Once it is ready, we carefully remove it from the oven and let it cool slightly before portioning.
