So, we take the onion, bell pepper, mushrooms, tomatoes, carrot, and celery and begin peeling and washing them. We cut the onion into julienne so that it cooks evenly and releases its natural aroma. We dice the bell pepper into small cubes, and we slice the mushrooms thinly to integrate perfectly into the dish. After blanching and peeling the tomatoes, we cut them into cubes, while the carrot and celery are grated to bring a fine texture and intense flavor.

Once we have prepared all the ingredients, we turn our attention to the pan in which we will cook. We heat a little oil in a deep pan, being careful not to use too much so as not to weigh down the dish. When the oil is hot enough, we add the chopped onion and sauté it over medium heat, stirring constantly until it becomes translucent. This will form the aromatic base of the stew. Once the onion has taken on a golden hue, we add the bell pepper, carrot, celery, and diced zucchini, followed by the sliced mushrooms. The dish will quickly come to life, and the flavors will intertwine in a delicious dance.

We let the ingredients sauté together until the liquid released by the vegetables evaporates, and the vegetables become slightly softer. After letting the stew simmer for another 5 minutes, we ensure that all the ingredients are well integrated. We turn off the heat and sprinkle fresh chopped dill on top, which will add a touch of freshness.
