To prepare a delicious and healthy salad, we start by choosing the right potatoes. Choose medium-sized potatoes, preferably with smooth skin, that boil easily and do not fall apart during cooking. Peel them and cut them into cubes or slices, depending on your preference. Boil them in a pot of salted water, letting them cook until they become soft but not too much, so they keep their shape. It is recommended to check the consistency with a fork. When they are ready, drain them and let them cool.

Meanwhile, prepare the onion. Choose a red or white onion, depending on your preference. Cut it into very small cubes, so it incorporates well into the salad. This will add a spicy flavor and a crunchy texture to the dish. If you prefer a milder onion, one solution would be to soak it in cold water for a few minutes, which will reduce its bitterness.

After the potatoes have cooled, add the chopped onion, green or black olives, depending on your taste. These bring a salty note and a Mediterranean flavor to the salad. Add salt and pepper to taste, being careful not to overdo it with the salt, considering that the olives are already salty.

To add extra flavor, drizzle the mixture with extra virgin olive oil, which will add a rich aroma and bind the ingredients together. Squeeze a fresh lemon, being careful to remove the seeds, as its juice will provide a note of freshness and a pleasant contrast to the sweetness of the potatoes.

Finally, sprinkle with plenty of freshly chopped parsley, which will add not only color but also a fresh and aromatic taste. Gently mix all the ingredients, being careful not to break the potatoes. Let the salad sit for a few minutes to allow the flavors to blend harmoniously.
