To start, we choose a fresh cauliflower with compact florets and no spots. It will be steamed, which will preserve most of the nutrients and avoid excessive water absorption. We take a larger pot, put in a centimeter of water, and place the whole cauliflower, covering it with a lid. We let it boil for about 10 minutes, starting from the moment the water starts to boil. It is important not to leave it too long, as we want it to soften but not turn into puree.
After the cauliflower is boiled, we carefully take it out of the pot and let it cool slightly. Then, we can mash it with a fork or, for a more uniform result, use a food processor. The mashed cauliflower should have a fine texture, but not completely homogenized, to keep some volume.
Once we have obtained a homogeneous mixture, we add a tablespoon of cream cheese, which will give a creamy taste to our dish. We mix well, then season with salt and pepper, to taste. This mixture will be the base for our delicious cubes.
