Zucchini fritters

Zucchini, these versatile vegetables, are an excellent choice for a healthy and delicious snack. Start by washing the zucchinis well under a stream of cold water, making sure to remove any trace of dirt. Then, use a large-holed grater to shred them, resulting in thin strips that are easy to prepare. Place the shredded zucchini in a large bowl and sprinkle salt over them. Mix well with a wooden spoon, ensuring the salt is evenly distributed. Let the zucchini sit for 10 minutes, during which the salt will help remove excess water. Meanwhile, wash the green onion and slice it into fine rings. This will add a touch of freshness and a pleasant flavor to your dish. In another bowl, beat the eggs with a whisk until frothy and smooth. After the waiting time, squeezing the zucchini is a crucial step; use a large piece of cheesecloth to press them, thus removing any excess liquid. This step will ensure that your dish does not become too wet. Once the zucchini is well drained, add the green onion and beaten eggs. Season the mixture with salt and pepper to taste, then mix everything well to combine the flavors. By doing this step, you will create a delicious and flavorful composition. Start adding the flour, but do this in two stages, mixing constantly to avoid lumps. The consistency should be smooth and easy to shape. In a non-stick frying pan, heat the oil until hot but not smoking. Using a spoon, place the mixture in the pan, forming small pancakes. Flatten them slightly with the back of the spoon or a spatula to achieve a round shape. Each pancake will cook for about 3-5 minutes on each side until golden and crispy. After frying, place the pancakes on a platter, between absorbent paper towels to remove excess oil. To add extra flavor, optionally sprinkle a little parmesan or grana padano on top just before serving. These zucchini pancakes are perfect as an appetizer or snack, being not only tasty but also healthy. You can serve them warm, alongside a fresh salad or a flavorful yogurt sauce. Enjoy every bite of this simple yet flavorful delicacy!
