Berries are a delicious and versatile ingredient, perfect for creating a flavorful sauce that can transform any ordinary dessert into an unforgettable culinary experience. We start by preparing the berry sauce, which will add a fresh and vibrant note to our dishes.

To begin, we take a medium saucepan and add the frozen berries, which can include raspberries, blackberries, blueberries, and strawberries. They combine perfectly and provide an intense flavor. We add sugar over the berries, the amount varying according to personal preferences regarding sweetness. Then, we place the saucepan over medium heat, stirring occasionally, so the berries begin to thaw gradually. It is important that the sugar completely dissolves, and the mixture becomes a thick, flavorful syrup.

After a few minutes, as it heats up, the natural juices of the fruits will be released, and the combination will start to simmer gently. At this point, we use a wooden spoon to gently crush the berries, releasing their aroma and vibrant color. There is no need to puree them completely; we want to maintain a slightly rustic texture that will contribute to the character of the sauce.

As soon as the mixture is well thickened and the fruits are still visible, we take the saucepan off the heat and let it cool slightly. Then, we transfer the mixture to the bowl of an immersion blender. Here, we add freshly grated lemon zest, which will bring a note of freshness and enhance the flavor of the sauce. We blend for a few seconds to obtain a fine fruit puree, but with small pieces of fruit that will give our sauce a rustic appearance.

Once we have a smooth puree, we add natural yogurt, which will provide a pleasant creaminess to the sauce, and finely chopped mint leaves, which will add a refreshing note. We pulse a few more times until all the ingredients are well combined.

The berry sauce is now ready to be served! We can use it to decorate fluffy waffles, adding a generous layer of whipped cream on top, or we can pour it over cheese-filled pancakes for a delicious breakfast or dessert.
