Pumpkin and Tomato Chutney

Pumpkin, onion, and garlic are essential ingredients that give the dish a unique flavor and pleasant texture. We start by peeling the pumpkin, which will add a touch of natural sweetness. We cut the pumpkin into small cubes so that it cooks evenly. The onion, with its intense aroma, should be finely chopped, and the garlic can be crushed to release its essential oils and provide a deeper taste. The tomatoes, rich in vitamins and antioxidants, are peeled, a process that facilitates their integration into the mixture, and cut into suitable pieces. In a thicker-bottomed pot, ideal for low-heat cooking, all the solid ingredients are added: pumpkin, onion, garlic, and tomatoes. These will form the base of our dish. To enhance the flavor and add a touch of sweetness, sugar is added, which will help caramelize the vegetables. The spices, whose aromas will provide a complex taste, pair perfectly with the base ingredients. Vinegar, added in moderation, will provide a pleasant contrast to the sweetness of the pumpkin and tomatoes, thus balancing the dish. The pot is placed on the heat, bringing the mixture to a boil. Once it starts boiling, the heat is reduced and covered with a lid. It is left on low heat for about two hours. It is important to stir occasionally to prevent the ingredients from sticking to the bottom of the pot. During cooking, it will be observed that the liquid rises to the surface. The final consistency of the dish should be slightly liquid, considering that as it cools, it will thicken. After the cooking time has elapsed, the hot mixture is carefully poured into sterilized jars, ensuring that no air bubbles remain. The jars are sealed well, and to ensure better sealing, they are turned upside down for 10 minutes. Then, they can be returned to the normal position and wrapped in towels to cool gradually. This preservation method will help retain the flavors and nutrients for about two months, giving you the chance to enjoy this delicious and healthy dish even out of season. It is a treat that can be used as a side dish or as a base for various meals, bringing a touch of joy to every meal.

- 200 g brown sugar
- 200 g white sugar
- 1 tablespoon of salt
- 1 teaspoon of grated ginger

- 500 ml apple cider vinegar
