We add the ramsons along with salt, being careful to stir constantly. This 'quick sautéing' technique allows us to maintain the crunchy texture of the ramsons while flavoring them. After a few minutes of cooking, we cover the pot with a lid and reduce the flame to the minimum. This steaming stage is crucial; we let the ramsons soften, becoming tender and juicy. When we notice that the bulbs are getting softer, we uncover the pot and increase the temperature to medium. We continue to stir gently, aiming for an even browning on all sides. This caramelization will add a sweet flavor and an appealing texture to our dish. Once the ramsons are nicely browned, we add white wine. We raise the flame to maximum and let the liquid boil, watching how the alcohol's aroma evaporates, leaving behind a distinctive sweetness. It is important not to neglect this step, as reducing the wine to more than half will intensify the flavors and allow the natural sugars in the wine to caramelize the ramsons. After reaching the desired consistency, we set the pot aside and let it cool slightly. Here comes the magic of balsamic vinegar, which we carefully add, stirring to incorporate it evenly.
