Lentils with Fried Eggs

Next, put the lentils in a pot with cold water, just enough to cover them by a finger, adding a bay leaf and a few thyme leaves to give it a pleasant aroma. Bring the water to a boil and let the lentils simmer over medium heat until they are al dente. It is important not to add salt during boiling, as this can hinder the cooking process. Once the lentils are ready, drain them and let them cool. Meanwhile, prepare the filling. In a pan, heat the oil and butter over medium heat and add the finely chopped onion and crushed garlic. Sauté these until they become translucent and fragrant, being careful not to burn them. Then, add the chopped bell peppers and continue to sauté until they soften, about 5-7 minutes. This colorful and savory mixture will add extra flavor to the lentils. After the onion, garlic, and pepper mixture is ready, add the cooled lentils, finely chopped fresh herbs, and half of the grated cheese. Mix the ingredients well and season with salt and pepper to taste. Transfer the mixture to a greased baking dish, ensuring it is evenly distributed.
