To create a delicious and healthy dish, let's start by preparing the ingredients. The first step is to carefully wash the asparagus, ensuring that we remove any impurities. If the stalks are thicker, it is recommended to peel off the outer skin to achieve a finer texture. After this stage, we take care of the onion: we peel it, wash it well under cold running water, and chop it finely, so that it caramelizes evenly during cooking.

Mushrooms, another essential ingredient, should be cleaned with a damp cloth, then washed quickly and sliced thinly. These will add a rich flavor to our dish. The asparagus stalks are cut into pieces of about 4 cm, to cook evenly and integrate easily into the mix.

In a heated pan with oil, we add the chopped onion and sauté it over medium heat, stirring constantly, until it becomes golden and translucent. Then, we add the pieces of asparagus and broccoli, continuing to sauté them together. It is important to monitor the cooking, and if we notice that the ingredients start to stick, we can add a few tablespoons of water, about two, to control the temperature and avoid burning.

Meanwhile, in another pan, we take care of the mushrooms and peppers. They are sautéed in oil until they become slightly browned and tender. Once both mixtures are ready, we carefully combine them in a large bowl. It is time to add salt and pepper to taste, to enhance the flavors.

To finish the dish, we add the finely chopped garlic and let everything cook for another minute, so the flavors blend harmoniously. The dish is served warm, with a little grated cheese on top, if desired, for an extra touch of flavor. This colorful and tasty mix can be enjoyed as a side dish alongside a juicy steak or boiled meat. This dish is not only delicious but also packed with nutrients, perfect for a healthy and comforting meal.
