To prepare a delicious eggplant and roasted pepper salad, we start by roasting the eggplants and peppers. We preheat the oven to 200 degrees Celsius. We place the eggplants and peppers on a tray, brush them with a little olive oil, and let them roast until the skin turns black and begins to peel off easily, while the flesh becomes soft and appetizing. This process can take between 30 and 40 minutes, depending on the size of the vegetables. Once they are ready, we take them out of the oven and cover them with aluminum foil or a clean towel to let the steam work, thus facilitating the peeling.

While the vegetables cool, we take care of the remaining ingredients. We peel the garlic, and if we want a stronger flavor, we can crush it a bit with the blade of a knife. We dice the tomatoes, making sure they are well ripened, to add a sweet-sour taste to the salad. When the eggplants and peppers have cooled sufficiently, we peel them and cut them into thin strips, being careful to keep the juice that forms, as it will add flavor to the dish.

Now, let's take care of the sausage. We slice the sausage into thin slices, but not too thick, so that it integrates well into the salad. The sausage slices will add a salty note and a smoky flavor, perfectly complementing the flavors of the roasted vegetables.

To finish the salad, we will prepare a delicious dressing. In a small bowl, we combine extra virgin olive oil with balsamic or wine vinegar, depending on preferences. We add salt to taste and, optionally, a bit of freshly ground pepper. We mix well until the ingredients are homogeneous and the dressing becomes creamy.

In a large bowl, we gather all the ingredients: the shredded eggplants and peppers, the diced tomatoes, the sausage slices, and the crushed garlic. We pour the dressing over the mixture and, with the help of a spatula, gently mix, being careful not to crush the vegetables, to keep the crunchy texture. We let the salad sit for a few minutes for the flavors to blend perfectly. Enjoy your meal!
