Spinach is a versatile and nutrient-rich vegetable, and the recipe below will show you how to prepare a delicious dish that combines its intense flavor with the aroma of garlic. We start by washing the spinach leaves in several waters to ensure they are clean and free of impurities. It is important to thoroughly clean the spinach from the stems, as they can be tough and unpleasant to taste. Once cleaned, we boil the spinach in a pot of salted water, allowing it to cook for about 10 minutes. This process will not only soften the leaves but also help retain their vibrant green color.

After the spinach has boiled, we drain it and, with the help of a knife, chop it finely. If you prefer, you can also use a meat grinder or a food processor to achieve a fine texture. In another important step, we clean the garlic and crush it to release all its flavors.

In a deep pan, we heat 50 ml of oil, then add 2 tablespoons of flour, stirring continuously to avoid lumps. After a few minutes, we add the crushed garlic and immediately afterward, the chopped spinach. It is essential to mix all the ingredients well to allow the flavors to blend harmoniously.

Once the mixture becomes homogeneous, we gradually pour in 500 ml of milk, continuing to stir. We add salt to taste and the remaining crushed garlic to enhance the flavor of the dish. We let the mixture simmer on low heat, bringing it to a boil 2-3 times, until the sauce begins to thicken slightly, creating a creamy and appetizing texture.

To complete this dish, we fry an egg in a bit of oil, ensuring that the yolk remains soft to add a pleasant contrast of textures. On a plate, we place a generous layer of spinach, and on top, we carefully place the fried egg.

For an extra touch of aesthetics and flavor, you can garnish the dish with a few sprigs of parsley or chili flakes, depending on your preferences. This recipe is not only tasty but also nutritious, ideal for a quick lunch or dinner. Enjoy your meal!
