Multicooker vegetable stew

Multicooker vegetable stew with potatoes is served hot, with fresh tomatoes on the side, as a main course on warm days. In the multicooker, the potatoes soften alongside the eggplant and zucchini, while the sauce stays light. I spoon it onto the plate with just enough sauce to moisten the vegetables. Preparation: 20 minutes. Cooking: 75 minutes. Resting: 0 minutes. Total time: 95 minutes. Servings: 4. Approximately 370 kcal and 9 g protein per serving.
Ingredients
- 3 tablespoons oil
- 1 large onion (200 g)
- 1 green pepper (150 g)
- 1 tomato (120 g)
- 1 medium eggplant (300 g)
- 1/2 large zucchini (300 g)
- 2 medium carrots (120 g)
- 6 medium potatoes (900 g)
- 1 teaspoon sea salt
- 200 ml water
- 1/2 teaspoon red paprika
- 1/2 teaspoon ground pepper
- 15 g fresh parsley
- 4 medium fresh tomatoes (600 g)
Preparation
1. Peel and wash the vegetables. Finely chop the onion and pepper; dice the tomato, eggplant, zucchini, carrots and potatoes. 2. Pour the oil into the multicooker pot and select the Fry function for 15 minutes. Sauté the onion and pepper in the hot oil, then add the tomato, eggplant and zucchini and let them sauté briefly. Add the carrots and potatoes to the pot. 3. Add the salt and water. When the Fry program ends, close the lid and select the Stew function for 1 hour. 4. Add the paprika and pepper 10 minutes before the program ends. 5. At the end, stir in the chopped parsley. Turn off the appliance and serve the stew hot, with fresh tomatoes.
Notes
It’s a little like a juicier vegetable stew, but the potatoes give it body. I don’t rush the initial sautéing; the onion and pepper have time to soften gradually. A firm, medium-sized eggplant usually has less spongy flesh than a very large one. Waxy potatoes hold their shape better while cooking. Refrigerate leftovers for up to 3 days and serve a portion with bread.
Frequently asked questions
Can I make it on the stovetop?
Yes. Leave it covered over low heat for about 45 minutes, until the potatoes are easily pierced with a fork.
Can I replace the green pepper with a red one?
Yes, use 1 red pepper of the same size; the stew will have a sweeter note.
Can I use yellow zucchini?
Yes, replace the green zucchini with 300 g yellow zucchini and cut it into roughly 2 cm cubes.
