To prepare a delicious dish with green beans and aromatic herbs, start by making a savory herb mix. In a bowl, combine fresh parsley, refreshing mint, and fragrant dill, all finely chopped. Add crushed garlic to enhance the flavor of this green mix. These herbs will not only enrich the taste of the dish but also add a note of freshness.

In a cast-iron pot or Dutch oven, begin to create the base of the dish. Add 1/4 of the chopped onion, which will bring sweetness and a subtle flavor. Next, add 1/3 of the green beans, washed, trimmed, and broken in half to ensure even cooking. Sprinkle 1/3 of the herb and garlic mixture, then season with salt and pepper to taste. Finally, pour in 1/3 of the oil, which will help caramelize the ingredients and add a pleasant texture.

Repeat this process, layering the ingredients in the pot until you reach the last portion of onion and oil. 700 g green beans, cleaned; 1 onion, very finely sliced; fresh parsley, dill, and mint, finely chopped; 3 teaspoons of crushed garlic (too much for my taste, so I only used 3 whole cloves that imparted their specific flavor and were discarded at the end); salt and freshly ground pepper; 100-200 ml olive oil; 60-80 ml lemon juice; lemon slices; Feta cheese (or fatty sheep telemea); Kalamata olives; bread.
