To prepare a delicious bean and cheese recipe, we will start by carefully cleaning the beans. It is essential to sort them, removing impurities or damaged beans. After cleaning the beans, we wash them well under cold running water, then let them drain in a sieve to remove excess water. The beans will then be boiled, but not too hard, to maintain their crunchy texture, that is, al dente. We can prepare them steamed or in boiling water, the choice being up to each one's discretion.

In a pan, we add a little oil and, over medium heat, sauté the finely chopped onion for 1-2 minutes, until it becomes translucent and starts to release its aroma. Once the onion begins to brown slightly, we add the sliced tomatoes. These will add a fresh note and a vibrant taste to our dish. We let the mixture sauté for a few minutes, stirring occasionally, and if necessary, we can add a little water to help soften the onions and tomatoes.

Meanwhile, in a separate bowl, we beat the egg whites until foamy, so that we obtain a fluffy and airy texture. We then add the beaten yolks, gently mixing them to avoid losing volume. In another bowl, we combine the flour with the milk and cheese, making sure there are no lumps and that the mixture becomes homogeneous. Over the flour, milk, and cheese mixture, we add the beaten egg whites with yolks, carefully mixing to maintain the airiness.

Once we have obtained a homogeneous mixture, we add the sautéed onions and tomatoes, mixing again. Finally, we incorporate the boiled beans, being careful to fold them in gently without crushing them. We prepare a baking dish that we grease with butter and dust with a little flour, ensuring that it won’t stick. We pour the mixture into the dish and place it in the preheated oven at 180 degrees Celsius. We let the dish bake for about 30-40 minutes, until it becomes golden and firm on the surface.

When ready, we take the dish out of the oven and let it cool slightly before portioning it. This recipe is not only delicious but also nutritious, making it perfect for a family meal or among friends. Enjoy it with pleasure! Bon appétit!
