Country-style Omelette

Choose a quality sausage with an intense flavor, and cut it into slices or cubes, as preferred. Heat a larger pan and add the butter, allowing it to melt evenly. When the butter is fully melted and starts to sizzle, add the sausages. Fry them over medium heat, stirring occasionally, until they become golden and crispy, and their enticing aroma spreads throughout the kitchen. Once the sausages are browned, it's time to add the onion. Chop the onion finely and add it to the pan. Fry the onion together with the sausages for about half a minute until it becomes translucent and fragrant. This step will enhance the flavor of the dish. Next, prepare the potatoes: peel them, grate them using a box grater, and make sure to drain them well to prevent a soggy omelette. Add the grated potatoes to the pan, mixing them well with the onion and sausages. Continue cooking the mixture over medium heat, stirring constantly for 2-3 minutes until the potatoes become slightly golden and start to soften. Now, it's time to add the eggs. Crack a few eggs into a bowl, add salt, pepper, and if desired, a dash of paprika, which will add a touch of color and a spicy flavor. Whisk the eggs with a fork, then pour them over the mixture in the pan. Gently stir so that the eggs distribute evenly.
