Quick fruit and yogurt dessert

Dessert - Quick fruit and yogurt dessert by Rafila E. - Recipia

This quick fruit and yogurt dessert is layered in cups, with fruit at the bottom and a smooth yogurt and sour cream mixture on top. The mixture stays soft, while the pieces of fruit remain distinct; the texture changes slightly depending on which fruits you choose. One day I tried several combinations of fruit; I leave the mulberries whole. Preparation: 15 minutes. Cooking: 0 minutes. Total time: 15 minutes. Servings: 4. Approximately 360 kcal and 8 g protein per serving.

Ingredients

  • 400 g mixed fresh fruit
  • 500 g full-fat plain yogurt
  • 200 g sour cream
  • 1 vial vanilla essence
  • 25 g sugar or equivalent sweetener (optional)
  • 80 g honey
  • 30 g chopped walnuts (optional)
  • 30 g raisins (optional)

Preparation

1. Wash the fruit and pat it dry well. Peel the pineapple, then cut it into small pieces along with the strawberries; leave the mulberries whole. Allow about 8 minutes. 2. Mix the yogurt with the sour cream and vanilla essence for 3 minutes, until smooth. If you want it sweeter, add 25 g sugar or an equivalent amount of sweetener. 3. Divide 200 g of the fruit among 4 cups and spoon the yogurt mixture on top. In about 2 minutes, it settles into a soft layer over the fruit. 4. Divide the remaining 200 g of fruit among the cups, then add the honey, walnuts and raisins. Allow about 2 minutes.

Notes

The plain mixture keeps covered in the fridge for up to 3 days; cut the fruit close to serving time so it doesn't release juice into the cups. For a dairy-free version, use 500 g soy yogurt and 200 g plant-based sour cream; the basic version contains dairy, and you can leave out the walnuts. Choose ripe but still firm fruit so it doesn't get crushed when cut. It has something of an ordinary bowl of yogurt with fruit about it, and stirring until the white streaks disappear is the part that's easy to rush. Serve with black tea.
