Pickles - Fig Jam by Emilia P. - Recipia
Figs are a sweet delight, and preparing fig jam is a true culinary art. We start by selecting fresh, ripe figs that are firm yet slightly elastic to the touch. It is essential to wash them carefully to remove any impurities or dust. After washing, we gently trim the stems, being careful not to crush them. These delicate fruits deserve all our attention.

Once the figs are prepared, we place them in a pot, covering them with a generous layer of sugar. The sugar will not only sweeten the jam but also help extract the juice from the fruit. We add a few tablespoons of freshly squeezed lemon juice, which will bring a touch of acidity, thus balancing the intense sweetness of the figs. We let this mixture sit overnight to allow the fruit to release its juice and for the flavors to meld.

The next day, we transfer the figs to the jam pot, placing it over medium heat. It's time to bring them to life! After about an hour of boiling, when the sweet aroma begins to fill the entire kitchen, we carefully remove the figs from the pot, leaving only the syrup to continue boiling. This is the crucial moment: we do not boil the figs any longer, as they will release a lot of water, and the syrup will not thicken properly.

We continue to boil the syrup until it thickens and reaches the desired consistency – a dense yet fluid texture that will envelop the figs in a delicious sauce. Once the syrup has reached the ideal consistency, we carefully pour it over the figs already placed in jars. We ensure an even coating for each fruit, so that each jar is full of flavor and good taste.

After filling the jars, we seal them tightly and let them cool completely. Thus, the fig jam is ready to delight our taste buds, offering us an unforgettable culinary experience. It can be enjoyed simply on a slice of toasted bread or as a topping for various desserts. This recipe not only indulges us with flavors but also brings us the joy of consuming a dish made with love and patience.
