Pickles - Cherry Compote by Lorelei B. - Recipia
To prepare a delicious cherry compote, you need a few simple ingredients and a little time. Start by washing the cherries well, ensuring they are free from any impurities. It is recommended to choose fresh, ripe cherries with a vibrant color, as they will add an intense flavor to your compote. Once the cherries are clean, carefully place them in a sterilized jar, being careful not to crush them.

After filling the jar with cherries, add the sugar. The amount of sugar can vary depending on personal preferences and the sweetness of the cherries. Usually, for a balanced taste, about 200-300 grams of sugar is recommended for one liter of water. This step is essential because the sugar will not only sweeten the compote but will also help preserve it.

After adding the sugar, fill the jar with cold water, ensuring the cherries are completely covered. It is important not to leave any air in the jar, as this can affect the preservation process. Once the jar is full, seal it tightly with a lid and make sure it is well sealed.

Now comes the interesting part! Wrap the jar in paper to protect it from direct light and to prevent possible damage during boiling. Place it in a larger pot, fill this pot with water up to halfway of the jar, creating a water bath. Put the pot on medium heat and wait for the water to reach boiling point.

Once the water starts boiling, set a timer for 30 minutes. This time is crucial for the cherries to absorb the flavors of the sugar and become delicious. Ensure that the water in the water bath does not drop below the recommended level, adding hot water if necessary.

After the 30 minutes have passed, turn off the heat and let the jar cool in the pot where it boiled. This step will help consolidate the flavors and create a pleasant texture for the compote. Once it has completely cooled, remove the jar from the water and store it in a cool, dark place. This way, you will have a tasty cherry compote, ready to be enjoyed both on its own and as an ingredient in various desserts.
