To prepare a delicious and comforting spaghetti dish, the first step is to bring the water to a boil. Use a large pot filled with water, which you lightly salt to add extra flavor to the pasta. I prefer to place the spaghetti upright, arranging them around the pot, allowing them to gradually sink into the water as they soften. This trick not only helps to ensure even cooking but also prevents the pasta from sticking together. After a few minutes, when all the spaghetti is in the water, I let them boil for a few more minutes to cook evenly. Then, I put the lid on and remove the pot from the heat, letting them 'rest' for a few minutes.

Meanwhile, we focus on the sauce, which will transform this dish into a flavorful culinary experience. In a pan, we heat a little oil, then add finely chopped onion. We let it sauté gently until it becomes translucent and fragrant. Then, we add the sliced mushrooms, stirring constantly to cook them evenly. It is essential to let them brown slightly to enhance the flavor.

Once the mushrooms are cooked, we add the 'winter pepper mix', an ingredient that brings a touch of freshness and color. We also pour in the tomato paste, and for a hint of sweetness, we sprinkle in a little sugar. We let the sauce simmer for a few minutes so that the flavors can blend harmoniously.

To thicken the sauce, we dissolve the cornstarch in a little cold water and add it, stirring continuously until the sauce becomes creamy and thick. At this point, it is time to season: we add salt, pepper, and our favorite spices, such as oregano or basil, for extra flavor. Finely chopped garlic is added at the end to preserve its intense aroma. We mix well and bring the sauce back to a boil, then cover the pan and remove it from the heat, letting the mixture rest for 5 minutes for the flavors to meld perfectly.

In the meantime, we drain the cooked spaghetti, being careful not to rinse them to keep the starch that will help them absorb the sauce. We serve the hot spaghetti topped with the fragrant sauce, and if desired, you can also add a little grated parmesan on top for an even more savory taste. In about 10-15 minutes, you will have a delicious and comforting dish ready, perfect for a quick and satisfying dinner. Enjoy every bite!
