To prepare a delicious pumpkin and cheese pasta dish, we start by gathering the necessary ingredients. You will need 300 grams of pasta (preferably penne or fusilli), a small pumpkin, a medium onion, two cloves of garlic, 50 grams of butter, salt, pepper, a handful of freshly chopped parsley, 100 grams of cheddar cheese, and 50 grams of grated parmesan.

The first step is to bring water to a boil in a large pot, adding a tablespoon of salt. When the water starts to boil, add the pasta and let it cook according to the package instructions until al dente. While the pasta is cooking, you can prepare the pumpkin sauce.

In a large skillet, melt the butter over medium heat. When the butter has completely melted, add the finely chopped onion and the crushed or finely chopped garlic cloves. Sauté the onion and garlic for a few minutes, stirring occasionally, until they become translucent and the flavors combine. Next, add the pumpkin, cut into small cubes.
