Tagliatelle with salmon and spinach: A delight cooked with love

When it comes to dishes that combine the flavors of the sea with those of nature, tagliatelle with salmon and spinach ranks at the top of preferences. This recipe, which I received with much love from a special person in my life, transforms a simple lunch into a true culinary experience. Although inspired by a lasagna recipe, the use of tagliatelle adds a unique and distinctive touch to this dish. Let's embark together on the preparation of this delicious recipe!

Preparation time: 30 minutes
Baking time: 25 minutes
Total time: 55 minutes
Number of servings: 4

Ingredients:

- 500 g tagliatelle
- 500 g fresh salmon
- 400 g spinach (fresh or frozen)
- 2 garlic cloves
- 1 red onion
- 100 g butter
- 80 g flour
- 1 liter milk
- salt and pepper, to taste
- 100-150 g grated mozzarella or gouda
- fresh dill
- olive oil

Ingredient preparation:

1. Salmon: Choose high-quality fresh salmon with a firm texture and vibrant color. Cut it into thin slices so it absorbs the marinade flavors. You can also opt for smoked salmon if you want a more intense taste.

2. Spinach: If using fresh spinach, wash it well and remove the stems. If you choose frozen spinach, make sure it is of good quality and thaw it before use.

3. Onion and garlic: Dice the onion into small cubes and finely chop the garlic. These ingredients will add a wonderful flavor to the dish.

Step by step preparation:

1. Preheat the oven: Preheat the oven to 220°C. This step is essential to achieve a golden and appetizing crust at the end.

2. Boiling the pasta: Fill a large pot with water and add salt. Bring the water to a boil, then add the tagliatelle. Boil them for 8 minutes, then drain and transfer them to a bowl.

3. Marinating the salmon: In a bowl, add olive oil, chopped garlic, and dill over the salmon slices. Allow the salmon to marinate for 30 minutes to enhance the flavor.

4. Preparing the Bechamel sauce: In a small pot, melt 50 g of butter over low heat. Separately, combine the flour with the milk in a bowl, mixing carefully to avoid lumps. Add the mixture to the pot with melted butter and continue stirring, gradually adding the rest of the milk. Season with salt and let the sauce simmer gently, then remove from heat.

5. Preparing the spinach sauce: In another pot, melt the remaining 50 g of butter, add the red onion and garlic, and sauté until translucent. Add the spinach, salt, and pepper, and bring everything to a boil. After a few minutes, remove from heat.

6. Assembling the dish: In a large baking dish, add a layer of tagliatelle, then a layer of salmon, a layer of spinach sauce, and finally a layer of Bechamel sauce. Repeat this process until all ingredients are used. At the end, sprinkle grated mozzarella or gouda on top.

7. Baking: Place the dish in the preheated oven and bake for 25 minutes, until the cheese turns golden and bubbly.

8. Serving: Allow the dish to cool for a few minutes before serving. It is delicious warm, and for an extra touch of flavor, you can sprinkle some fresh dill on top before serving.

Useful tips and tricks:

- If you want a healthier option, you can replace the pasta with whole wheat tagliatelle.
- Adding cherry tomatoes or roasted peppers can add a splash of color and a pleasant additional taste.
- Serve the dish alongside a dry white wine, which will perfectly complement the flavors of the salmon and spinach.
- If you have leftovers from this recipe, reheat it in the oven, but cover it with aluminum foil to prevent drying out.
