A short and natural introduction

Oven-baked trout with marinade is one of my go-to quick options when I have fresh fish and don’t want to fry it. Most of the time, I prepare everything a few hours in advance, let the fish marinate, and finish it off in the oven in the evening. You don’t need many ingredients – most of them are readily available.

Ingredients

4 trout (cleaned and gutted)
200 ml white wine
200 ml water

For the marinade:
1 tablespoon whole grain mustard (Dijon or classic)
1 tablespoon soy sauce
1 pinch fish seasoning
1 pinch rosemary (dried or fresh, just enough to fit on the tip of a knife)
salt (to taste)
pepper (freshly ground, to taste)
2 tablespoons olive oil

Instructions

1. Prepare the marinade in a small bowl. Mix the whole grain mustard, soy sauce, rosemary, fish seasoning, salt, pepper, and olive oil together. Just stir everything until well combined.

2. Rinse the trout thoroughly and dry them with paper towels. Make sure they are scaled and gutted.

3. Rub each fish, both inside and out, with the prepared marinade. If you like, massage the marinade into the flesh to enhance the flavors.

4. Cover the fish and refrigerate for at least two hours, ideally three to four. If you’re in a hurry, you can shorten the time, but the flavors won’t be as well absorbed.

5. Preheat the oven to 180-200°C (medium to high heat).

6. Place the fish, along with all the marinade, in a large baking dish. Pour the white wine and 200 ml of water over the fish. No additional fat is needed.

7. Put the dish in the oven and bake for 20 to 30 minutes, depending on the size of the trout and how browned you want it. Occasionally, you can baste the fish with the liquid from the dish.

8. Remove the dish from the oven. You can serve the trout simply with a squeeze of fresh lemon juice over it, or with a side of your choice.

Why I make this recipe often

I make it frequently because it’s quick, doesn’t require many ingredients, and avoids the smell of frying. The trout comes out tender and juicy without drying out. I also appreciate that there aren’t many dishes to wash afterward.

Tips and variations

Tips

If you have time, let the fish marinate longer, at least three hours.
Do not cover the fish in the oven – the skin will get some color.
If you want a crispier crust, turn on the grill a few minutes before the end.
Substitutions

You can use trout fillets, but the baking time will decrease (10-15 minutes).
You can swap the trout for another firm-fleshed fish (like dorado or mackerel).
For a different note, you can replace rosemary with thyme or dried basil.
Variations

Add 1-2 crushed garlic cloves to the marinade if you prefer a stronger flavor.
If you don’t have whole grain mustard, use regular mustard, but don’t add more than indicated.
You can place thin slices of lemon in the dish, under or over the fish.
Serving ideas

It goes best with boiled potatoes or rice. Sometimes I serve it simply with green salad and lemon slices. It also pairs well with steamed vegetables.

Yes, but you need to fully thaw it and dry it well before marinating.

2. If I don’t have white wine, what can I use instead?
You can use just water or sparkling water. The taste will be more neutral, but the recipe will still work.

Ideally between 3 and 4 hours, but at least an hour if you don’t have more time.

4. Can the marinade be made with a different type of mustard?
Yes, but if you use plain or Dijon mustard, make sure it’s not too much, otherwise the taste can become overpowering.

5. Can I add vegetables to the dish?
Yes, you can add slices of carrot or onion, but do not change the amount of liquid.

Storage and reheating

Oven-baked trout is good the next day if you keep it in the refrigerator, covered. You can eat it cold or briefly reheat it in the oven or steamer. I do not recommend reheating in the microwave as it can dry out. However, it’s best on the day it was cooked.
