I made this recipe on a Sunday when I craved something hearty but wanted to use the vegetables that were piling up in the fridge. Ingredients

1 upper turkey leg (about 1200 g)
12 potatoes
3 carrots
1 small piece of celery root
2 small red onions
1 apple

For the marinade:
5 tablespoons olive oil
1 teaspoon ground ginger
1/2 teaspoon chili
1 teaspoon coriander seeds
1 teaspoon black peppercorns
1 teaspoon sea salt
1/4 teaspoon ground pepper
1 teaspoon dried oregano
1/2 cup white wine
1/2 cup water
1 white onion
1 head of garlic

Preparation method

1. Prepare the marinade.
In a large bowl, put the 5 tablespoons of olive oil. Peel the white onion and chop it finely. The peeled garlic can be pressed through a garlic press or mashed well. Add the onion, garlic, and all the spices: ground ginger, chili, coriander seeds, peppercorns, salt, ground pepper, and dried oregano. Pour in the white wine and water. Mix everything together.

2. Marinate the meat.
Put the turkey leg in the marinade. Turn it a few times to ensure it is covered on all sides. Cover the dish and place it in the fridge for 3 hours. If you have time, you can leave it overnight, but 3 hours are enough to absorb the flavor.

3. Prepare the vegetables.
Peel the potatoes, carrots, celery, and red onion. Wash them well. Cut the potatoes in half (if they are smaller, they can remain whole). Slice the carrots into rounds of 3-4 cm. Cut the celery into thicker slices. Leave the onions whole or cut them in half, according to preference. Cut the apple in half, including the skin.

4. Arrange the baking tray.
Take the meat out of the fridge and place it in a large baking dish, skin side up. Pour the marinade over the meat. Arrange the potatoes, carrots, celery, and red onion in the dish alongside the meat. Sprinkle a little salt and pepper over the vegetables. Place the apple at the end, on the edge or between the vegetables. If you want, you can drizzle a little white wine over the vegetables (optional).

5. Bake in the oven.
Cover the dish with aluminum foil. Place the dish in the preheated oven at 190-200°C for about 50 minutes.

6. Brown the meat.
After 50 minutes, take the dish out, remove the aluminum foil, and baste the meat with the sauce from the dish. Put it back in the oven without foil for another 30 minutes. The meat should brown, and the vegetables should be cooked.

7. Check if it's done.
Insert a fork into the turkey leg; if it goes in easily and the juice is clear, it's done. If not, leave it for another 10 minutes.

8. Serving.
Remove the meat to a platter, slice it, and arrange the vegetables and apple pieces alongside. The sauce from the dish can be poured over the meat.
