In a large bowl, we start by mixing olive oil with port juice, gradually adding our favorite herbs like basil, oregano, or thyme for a distinct flavor. We season the mixture with salt, freshly ground pepper, and a teaspoon of sugar, which will help balance the flavors. It is essential to thoroughly homogenize all the ingredients to ensure the flavors combine perfectly.

Separately, in another bowl, we combine flour with cornmeal and baking powder, mixing them with a spatula or whisk until we achieve a uniform composition. It is important that all dry ingredients are well integrated to prevent lumps in the dough. Over this mixture, we add the combination of olive oil, beaten egg, and milk. We use a wooden spoon or mixer to homogenize the composition, so we obtain a creamy and consistent dough, similar to that of a cake.

Meanwhile, we wash the tomatoes, peel them, and cut them into small cubes for better integration into the dough. Then, we add the chopped tomatoes and olives, sliced into rounds, to our dough. These ingredients will not only add a delicious taste but also provide an interesting texture to the final dish. We carefully mix, ensuring that every piece of tomato and olive is well incorporated.

We prepare a baking tray or a heat-resistant dish, greasing it with olive oil to prevent the dough from sticking. We pour the obtained composition into the tray, leveling the surface with a spatula to ensure the dough bakes evenly. We preheat the oven to 180 degrees Celsius and bake the pie for about an hour, or until it becomes golden and well-baked.
