Romanian beef stew in a multicooker

Romanian beef stew in a multicooker is served hot with mămăligă, a Romanian cornmeal porridge, while the meat simmers slowly in red wine with onion and tomatoes. The sauce thickens in the multicooker, and I choose chuck pieces that are similar in size, about 4 cm, so I can brown them on all sides. Prep: 20 minutes. Cook: 178 minutes. Total time: 198 minutes. Servings: 4. About 670 kcal and 40 g protein per serving.
Ingredients
- 800 g beef stew meat (shoulder)
- 3 tablespoons oil
- 1/4 teaspoon ground pepper
- 4 large onions (600 g)
- 1 medium carrot (150 g)
- 1 bay leaf
- 1/8 teaspoon ground dried thyme
- 200 ml water
- 400 ml red wine
- 1/4 teaspoon sweet paprika
- 1/4 teaspoon hot paprika
- 400 g whole canned tomatoes
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
Preparation
1. Cut the meat into pieces about 4 cm in size and pat dry with paper towels. Sprinkle with 1/4 teaspoon ground pepper. Cut the onion into julienne strips, grate the carrot and lightly crush the tomatoes with a fork. 2. Pour the oil into the inner pot and add the meat. Press MENU, select FRY and COOKING TIME, set it to 20 minutes and press START. Brown the pieces on all sides until golden, then transfer them to a plate. 3. In the same pot, add the onion, carrot, bay leaf and thyme to the remaining oil. Select FRY for 8 minutes. The onion should soften. 4. Return the meat to the pot and add the water, red wine, sweet paprika, hot paprika and the remaining 1/4 teaspoon pepper. Select STEW for 2 hours and 30 minutes, press START and close the lid. 5. Add the crushed tomatoes and 1 teaspoon salt 10-15 minutes before the program ends. At the end, turn off the appliance and serve the stew hot with mămăligă.
Notes
For a long simmer, chuck or shank with fine strands of connective tissue works well; a very lean cut can dry out. The quality of the meat affects the cooking time, and if it falls apart easily with a fork before the program ends, you can shorten the time. Browning is the part I tend to rush; leave space between the pieces in the pot and work in batches if they do not fit in a single layer. The wine goes into the pot uncooked; for an alcohol-free version, replace the 400 ml wine with 400 ml beef broth. For less heat, use 1/2 teaspoon sweet paprika instead of the combination of paprikas. Keep leftovers in the fridge for up to 3 days. When reheating, add a little water if the sauce has thickened too much. Mămăligă is just right with this sauce.
Frequently asked questions
Why is the meat still tough?
Let it cook longer on STEW in 15-minute increments, until a fork slides in easily.
Can I use fresh tomatoes instead of canned?
Yes, use 400 g fresh tomatoes, peeled and crushed, and add them during the last 10-15 minutes as well.
Can I cook it on the stovetop?
Yes. Use a heavy pot with a lid and keep it at a very gentle simmer.
What should I do if the sauce is too thin?
Take out the meat and let the sauce cook for 5 minutes on FRY with the lid open, then return the meat to the pot.
