Pork-stuffed peppers in a multicooker

Meat - Pork-stuffed peppers in a multicooker by Elena D. - Recipia

Parsley and dill stems go under pork-stuffed peppers in a multicooker, cooked for 90 minutes. The pork and rice filling softens in borș de putină, a Romanian fermented bran liquid, and the tomatoes stay on as caps at the ends; that’s how I make them in a multicooker. I choose peppers that are close in size, with thick walls. Prep: 35 minutes. Cook: 98 minutes. Rest: 15 minutes. Total time: 148 minutes. Servings: 5. About 840 kcal and 39 g of protein per serving.

Ingredients

  • 1750 g bell peppers
  • 3 large onions (450 g)
  • 30 ml oil
  • 100 ml tomato juice
  • 100 g rice
  • 1 kg minced pork
  • 2 green onions
  • 15 g parsley
  • 15 g dill
  • 2 teaspoons salt
  • 1/2 teaspoon ground pepper
  • 2 medium tomatoes (300 g)
  • 500 ml borș de putină
  • 500 ml water
  • 200 g sour cream
  • 1 hot pepper

Preparation

1. Wash the peppers, cut off the stems and remove the seeds. Lightly score the tip of each one. 2. Peel and slice the onions. Sauté them in 30 ml of oil, along with 100 ml of tomato juice, for 8 minutes, until softened. Add the rice and stir. 3. Let the mixture cool for 15 minutes. Finely chop the green onions and the parsley and dill leaves. Mix them with the pork, the sautéed onion and rice, 2 teaspoons of salt and 1/2 teaspoon of pepper. 4. Fill the peppers without packing the filling too tightly, and leave a little room at the top. Cut the tomatoes into thick slices and place one over the opening of each pepper. 5. Put the parsley and dill stems in the bottom of the multicooker. Set the peppers on top, pour in 500 ml of borș de putină and 500 ml of water, then select MENU and the STEW function for 90 minutes, until the peppers are tender and the filling is cooked through. 6. Serve with sour cream and hot pepper.

Notes

Peppers with thick walls hold the filling better, and ones that are close in size cook more evenly. If they’re very large, check for tenderness after the 90 minutes, before taking them out of the pot. Borș de putină can be more sour or saltier from one jar to another. If it’s too sharp, replace 150 ml of the borș with the same amount of water. A pepper with thin walls can crack during cooking, so handle them carefully as you set them in the pot. The sour cream served alongside contains dairy and can be left out without changing the filling. You can serve them with polenta, which soaks up the liquid on the plate. Keep any leftovers in a covered container in the fridge for up to 3 days.

Frequently asked questions

What pork should I use for the filling?

Minced pork shoulder has enough fat for a tender filling. If you check the temperature in the center, it should reach 71°C.

Can they be cooked on the stovetop too?

Yes. Put them in a covered pot over low heat, and start checking for tenderness after 75 minutes.

Why did the filling turn out too soft?

The rice can get too soft if it sits in the sautéed mixture for a long time before cooling. After adding it to the pan, stir for about 2 minutes, then take the pan off the heat.
