To prepare a delicious citrus-flavored cake, we start by preparing the necessary ingredients. First, we grate the peel of a lemon and an orange, being careful not to remove the white part, which can be bitter. The grated peel will add a vibrant and fresh note to our cake. Then, we squeeze the juice from these fruits, needing about 3-4 tablespoons, which will enrich the flavor of the preparation.

In a large bowl, we beat the eggs together with a pinch of salt and sugar, using a mixer, until we obtain a whitish and fluffy foam. This step is essential to ensure an airy texture for the cake. After we have obtained this foam, we add the vanilla essence, which will provide a sweet and pleasant aroma. We then integrate the grated citrus peel and 3-4 tablespoons of their juice, continuing to mix to combine the flavors.

The next step is to gradually add water, mixing constantly. After incorporating the water, we start pouring in the oil, which is the ingredient that will add moisture and help achieve a fine texture. In another bowl, we mix the flour with the corn flour and baking powder, then combine the two mixtures, gently stirring until the ingredients are homogenized.

We prepare a cake mold that we grease with butter, oil, or margarine, then we dust it with flour to prevent sticking. We carefully pour the batter into the mold and place the cake in the preheated oven at 180 degrees Celsius. Baking takes about 40 minutes, and halfway through the baking time, it is recommended to gently cut down the middle with a knife to allow the cake to bake evenly.

While the cake is baking, we prepare a delicious syrup made from the juice obtained from the citrus fruits, sugar, and a cup of water. We boil the mixture until it thickens slightly, being careful not to let it become too viscous. When the cake is ready, we take it out of the oven and, using a thin knife, we poke it all over the surface so that the syrup can soak in well.
