The history of this tart reminds us of the tradition of using simple and local ingredients, transforming them into flavorful dishes. Whether you enjoy it warm, straight from the oven, or cold the next day, this tart will quickly become your favorite.

Ingredients

For the dough:
- 250 g flour
- 150 ml warm water
- 1 teaspoon dry yeast
- 1 teaspoon salt
- 1 teaspoon sugar
- 3 tablespoons olive oil

For the filling:
- 300 g chicken breast, diced
- 100 g smoked pork loin, cut into small pieces
- 400 g white mushrooms, cleaned and sliced
- 2 eggs
- 100 g sour cream
- 100 g grated cheese
- 50 g mozzarella, diced
- 2 tablespoons tomato sauce
- 2 garlic cloves, crushed
- Salt and pepper, to taste
- Oregano, to taste

Instructions

1. Preparing the dough
In a small bowl, combine the dry yeast with the sugar and dissolve them in 50 ml of the warm water. Let the mixture sit for 10 minutes until it becomes frothy. This step is essential to activate the yeast, ensuring that the dough will rise beautifully.

2. Making the dough
In a large bowl, add the flour, salt, and olive oil. After the yeast has activated, add the yeast mixture and the remaining water. Use a dough mixer to combine the ingredients for about 5 minutes until you achieve a smooth and elastic dough. Cover the bowl with a towel and let it rise in a warm place for 20 minutes.

3. Preparing the filling
During this time, prepare the filling. Wash the mushrooms and slice them. It is recommended to let them drain, as mushrooms can release water, which might affect the tart's texture. In a pan, add a little oil and sauté the chicken breast until golden. Add the smoked pork loin and mushrooms and continue to cook for a few minutes until the mushrooms soften and release water. Season with salt, pepper, and oregano to enhance the flavors.

4. Assembling the tart
Once the dough has risen, remove it from the bowl and roll it out on a floured surface until you get a thin sheet that fits into the tart pan. Transfer the dough to the prepared pan, trimming any excess dough from the edges.

5. Preparing the sauce
In a bowl, mix the tomato sauce with the crushed garlic and a pinch of oregano. Spread this sauce over the dough, then evenly distribute the chicken and mushroom mixture over the entire surface.

6. Adding cheese
Sprinkle the diced mozzarella and grated cheese on top of the mixture.

7. Preparing the sour cream sauce
In another bowl, beat the eggs with the sour cream, adding a pinch of salt and pepper. Pour this mixture over the tart filling, ensuring it distributes evenly.

8. Baking
Preheat the oven to 180 degrees Celsius. Bake the tart for 30-35 minutes, or until golden and the filling is well cooked.

9. Finalizing
Finally, remove the tart from the oven and sprinkle the remaining cheese on top. Return the tart to the oven for a few minutes until the cheese melts and becomes slightly golden.

Serving and variations

This tart is served warm, but it is just as delicious cold the next day. You can add a fresh salad next to the tart to provide a contrast of textures and balance the flavors. An excellent drink pairing would be a dry white wine or a refreshing lemonade.

Practical tips:
- If you want a vegetarian version, you can replace the chicken breast with seasonal vegetables like zucchini, peppers, or spinach.
- Make sure the mushrooms are well drained to avoid excess moisture in the tart.
- You can add spices like thyme or basil to customize the flavors.

Calories and nutritional benefits:
This tart offers a balanced combination of protein from the chicken and eggs, carbohydrates from the dough, and healthy fats from the cheese and olive oil. Each serving contains approximately 350-400 calories, depending on the ingredients used.

I hope this chicken and mushroom tart recipe delights you and brings joy to your kitchen! Don't forget to experiment and add your personal touch to make this dish even more special!
