For the pastry dough, we will need lukewarm water, salt, flour, and yeast. In a large bowl, add about 500 grams of flour, one teaspoon of salt, and 10 grams of dry yeast or 25 grams of fresh yeast. Mix the dry ingredients well, then gradually add 250 ml of lukewarm water. Knead the dough for about 10 minutes until it becomes elastic and smooth. Cover the bowl with a clean towel and let the dough rise in a warm place for about 1 hour or until it doubles in size.

Meanwhile, let's take care of the filling. Choose a creamy cheese, such as spreadable cheese and ricotta. In another bowl, combine 200 grams of spreadable cheese with 200 grams of ricotta. Add one teaspoon of salt and mix well until you obtain a homogeneous mixture. You can customize the filling by adding fresh herbs, such as dill or parsley, or even a bit of black pepper for a more intense flavor.

After the dough has risen, roll it out on a floured surface until you get a thin sheet. Cut circles about 10-12 cm in diameter. In the center of each circle, add a tablespoon of the cheese filling. Fold the circle in half, then seal the edges by pressing with your fingers or a fork, making sure the filling doesn't leak during cooking.

Heat a non-stick skillet over medium heat and add a little oil. Cook the pastries for 3-4 minutes on each side until they become golden and crispy. After removing them from the skillet, let them cool slightly on a clean towel. Serve the pastries warm, possibly alongside a yogurt or sour cream sauce, to add extra flavor.
