The dough is the foundation of any successful recipe, and this dish is no exception. We start by sifting the flour into a large bowl, an essential process to remove any lumps and to aerate the ingredient. To this flour, we add the dry yeast, salt, and sugar. The dry mixture is crucial as the salt helps strengthen the dough's texture, while the sugar adds a bit of sweetness and helps activate the yeast. After mixing all the dry ingredients, we gradually pour in the water, starting with one ladle at a time. It is important to knead the dough constantly until we achieve an elastic and slightly sticky texture. Finally, we add the olive oil, which will provide a rich flavor and make the dough softer.

Once we have the desired dough, we cover it with a clean towel and let it rise for 40-50 minutes in a warm place, away from drafts. This step is essential as the yeast will start to ferment, and it will also make the dough rise beautifully, giving it a fluffy texture.

In the meantime, we prepare the filling. We slice the olives into thin rounds so that they integrate perfectly into the mixture. The cheese, which will provide a savory taste, is grated on a large grater, ensuring it will melt evenly during baking. After the dough has risen, we sprinkle flour on the work surface, turn the dough out, and divide it into two equal parts.

We roll out the first sheet of dough to a suitable thickness and place it in a rectangular baking dish lined with parchment paper. We ensure a solid base for the filling by first placing the rounds of olives, then the grated cheese and Parmesan for added flavor. Then, we roll out the second sheet of dough and place it on top of the filling. We let everything rise for another 10-15 minutes to allow the dough to puff up again.

Before placing the dish in the oven, we brush the surface with olive oil, and then sprinkle sesame seeds, poppy seeds, and pumpkin seeds, which will not only add a crunchy note but also an attractive visual aspect. The oven should be well preheated, and when we place the bread inside, we make sure the temperature is right to achieve a golden-brown crust. After baking, we remove the bread from the oven, and if we are not serving it immediately, we cover it with a thick towel to keep it soft and fluffy. Thus, we have a delicious dish that will delight anyone who tastes it.
