Oven-Baked Potatoes with Vegetables and Sausages On days when I want a hearty meal but don’t want to spend too much time in the kitchen, I make oven-baked potatoes with vegetables and sausages. The ingredients are simple, usually available at home, and the combination of potatoes, carrots, sausages, and olives works well for a quick dinner or even lunch. The tray goes into the oven, and there’s not much left to do until it’s ready. Quick Info Total Time: about 1 hour Preparation Time: 20 minutes Cooking/Baking Time: 35-40 minutes (boiling and baking) Servings: 4 Difficulty: easy Recipe Type: main course, quick dinner, tray meal Ingredients 6 medium potatoes 4 sausages (preferably smoked or semi-smoked) 2 small carrots 1/2 red bell pepper 10 green olives (with pits) 10 black olives (pitted) fresh parsley salt, pepper 1/2 teaspoon potato seasoning mix oil (for frying the sausages) butter (for greasing the tray) Instructions 1. Peel the potatoes, cut them into suitable cubes, and wash them well. Place them in a pot of cold salted water to boil. 2. Peel the carrots, wash them, and add them to the same pot with the potatoes. Boil everything for 15 minutes, until the potatoes start to soften but are not fully cooked. 3. Meanwhile, slice the sausages into rounds and fry them in a little oil on both sides until they are lightly browned. Remove them to a paper towel to drain excess fat. 4. Wash the red bell pepper, remove the seeds, and cut it into thin strips. 5. Grease the baking tray with butter to prevent sticking (you can also use parchment paper if you prefer). 6. When the potatoes and carrots are boiled, drain them well. Slice the carrots into thin rounds. 7. Place the potatoes in the tray, add the sliced carrots, fried sausages, bell pepper strips, and the potato seasoning. Gently mix everything in the tray. 8. Check for salt and pepper, adding more to taste. 9. Cut the black olives (pitted) in half. The green olives with pits can be added whole. Sprinkle them over the ingredients in the tray. 10. Finally, add the washed and finely chopped parsley. 11. Place the tray in the preheated oven at 200°C (392°F) and bake for 15-20 minutes, until the vegetables develop a slight crust and everything is nicely browned. Serve warm, directly from the tray. Why I Make This Recipe Often It’s quick to prepare and doesn’t involve complicated techniques. The ingredients are always on hand and can vary based on what I have in the fridge. Plus, it can easily be made for multiple people without much hassle. Tips and Variations Tips You can check the texture of the potatoes and carrots before placing them in the oven; they should not be too soft, or they will break apart. Use sausages with a bit of smokiness for a more intense flavor. Don’t overcrowd the tray; otherwise, the vegetables may become too soft. Substitutions You can use any type of sausage, including fresh ones, but cook them completely before adding them to the tray. Olives can be either black or green, depending on what you have on hand. Butter for greasing the tray can be replaced with a little oil. Variations Add sliced mushrooms for extra texture. You can include sliced onions if you want a slightly different taste. If you don’t have potato seasoning, use paprika or thyme. Serving Ideas Serve with a simple salad of tomatoes or cucumbers. It also pairs well with pickles, especially in winter. Frequently Asked Questions Can I use new potatoes? Yes, new potatoes work well, just reduce the boiling time a bit. Do I need to boil the potatoes before baking? Yes, otherwise they will remain hard in the middle and won’t cook evenly with the other ingredients. Can I omit the olives? Sure, if you don’t like them or don’t have them, you can leave them out. The recipe will still be tasty. What type of sausages is best? Smoked or semi-smoked sausages add more flavor, but you can also use fresh sausages, cooked beforehand. Can I add more vegetables? You can, but don’t overcrowd the tray to ensure all ingredients brown well. Nutritional Values (approximate) One serving has about 350-400 kcal. Protein: 12-15g Fat: 16-18g (depending on the type of sausage) Carbohydrates: 35-40g Fiber: 5-6g Values are indicative and depend on the type of sausage and whether you use more oil or butter. Storage and Reheating The dish keeps well in the refrigerator, covered, for up to 2 days. It can be reheated in the oven or microwave, but the texture of the potatoes may become a bit softer. It’s best enjoyed fresh, straight from the tray.

Preparation

We peel the potatoes, cut them into cubes, wash them, and put them to boil in cold salted water. We let them boil for 15 minutes. Together with the potatoes, we also boil the peeled and washed carrots. We cut the sausages into rounds and fry them on both sides. We place them on a paper towel to absorb the excess oil. We cut the cleaned and washed bell pepper into thin strips. We grease a baking tray with butter (you can also use parchment paper). When the potatoes and carrots are boiled, we drain them. We place the potatoes in the tray, cut the carrots into rounds, and add them to the tray with the potatoes. We add the sausages, red pepper, and spices. If necessary, sprinkle salt and pepper to taste. We cut the black olives (without pits) in half and add them to the tray with the potatoes along with the green olives (with pits). Finally, we add the washed and finely chopped parsley. We bake in a preheated oven at 200 degrees for 15-20 minutes. Serve hot.
