Baked pork meatloaf roll

Baked pork meatloaf roll is wrapped while it cooks, so it stays compact and cuts into neat slices for serving cold. At the end, it gets a thin crust of breadcrumbs, hot paprika and garlic, while the onion and carrot go into the minced mixture. I grate the carrot finely rather than chopping it. Preparation: 20 minutes. Cooking: 72-83 minutes. Resting: 60 minutes. Total time: 152-163 minutes. Serves: 8. Approximately 380 kcal and 29 g protein per serving.
Ingredients
- 1 kg pork leg with a little visible fat
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon sweet paprika
- 1 teaspoon thyme
- 1 medium onion (150 g)
- 1 medium carrot (80 g)
- 3 tablespoons sunflower oil
- 2-3 tablespoons breadcrumbs
- 1/2 teaspoon hot paprika
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon sweet paprika
Preparation
1. Cut the pork leg into cubes and, preferably, grind it twice in a meat grinder or food processor. Mix 1 teaspoon of salt, 1/2 teaspoon of pepper, 1 teaspoon of sweet paprika and 1 teaspoon of thyme into the meat. 2. Peel and wash the onion and carrot, then chop them finely or grate them. Add them to the meat along with 3 tablespoons of oil and mix well. Cover the mixture and chill for 30 minutes. 3. Preheat the oven to 150°C. Place the meat on baking paper and shape it into a roll, then wrap it tightly in the paper and aluminum foil. Put it in a baking pan and cook for 70-80 minutes, until the meat is cooked through to the center. 4. Carefully remove the pan and unwrap the foil and paper, keeping clear of the steam. Mix the breadcrumbs with the hot paprika, garlic powder and 1/4 teaspoon of salt. Dust the roll with the mixture and return it to the oven for 2-3 minutes, until the coating on top has dried. 5. Leave the roll to cool for 30 minutes, then wrap it in baking paper and refrigerate. When serving, dust it with 1/4 teaspoon of sweet paprika.
Notes
It keeps wrapped in the refrigerator for up to 3 days and can be baked a day ahead. Choose pork leg with a little visible fat. If the roll is thick, the center needs longer to cook than the edges. Sometimes the breadcrumbs get damp from the steam, so leave the surface to dry out a little after unwrapping. Served cold, it is a bit like meatloaf, only cut into thin slices. Serve it with a seasonal salad. For a gluten-free version, use 2-3 tablespoons of gluten-free breadcrumbs.
