Baked chicken breast with vegetables

Baked chicken breast with vegetables is covered with foil for the first 30 minutes; turn the chicken slices after ten minutes without the foil. At the end, the eggplant and zucchini are soft, and the chicken slices take on a little color on top, without a thick crust. I cut the breast into slices of similar thickness, not too thin. Prep: 20 minutes. Cook: 50 minutes. Rest: 1-2 hours. Total time: 130-190 minutes. Serves: 4. About 450 kcal and 50 g protein per serving.
Ingredients
- 850 g sliced chicken breast
For the marinade
- 30 ml olive oil
- 1 teaspoon sea salt
- 1 teaspoon sweet paprika
- 1/2 teaspoon ground pepper
- 1/2 teaspoon ground ginger
For the baking dish
- 1 large eggplant (400 g)
- 1 large zucchini (300 g)
- 1 medium bell pepper (150 g)
- 1 medium tomato (150 g)
- 1 large onion (200 g) (optional)
- 15 ml olive oil
- 15 ml olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
Preparation
1. Pat the chicken breast dry with paper towels. Mix 30 ml olive oil with 1 teaspoon sea salt, 1 teaspoon sweet paprika, 1/2 teaspoon pepper and 1/2 teaspoon ginger. Coat each slice in the marinade and leave it in the fridge for 1-2 hours. 2. Preheat the oven to 200°C. Wash the eggplant and zucchini; I peel them, but you can leave the skin on if you prefer. Cut them into rounds about 1 cm thick. Slice the pepper, tomato and onion. 3. Grease the bottom of the baking dish with 15 ml olive oil. Arrange the zucchini and eggplant rounds in alternating layers, sprinkling them with 1 teaspoon salt and 1/2 teaspoon pepper. Drizzle the vegetables with another 15 ml oil, then place the pepper, tomato and onion on top. 4. Arrange the chicken slices over the vegetables and cover the dish with aluminum foil. Bake for 30 minutes at 200°C. 5. Remove the foil and bake for another 20 minutes. After 10 minutes, turn the chicken slices; take the dish out when they are lightly browned and no longer pink in the center. Check that they don’t dry out too much on top.
Notes
Keeps in the fridge in a sealed container for up to 3 days; when reheating, cover the dish so the chicken breast doesn’t dry out. Turkey breast can replace the chicken in the same quantity, and the vegetables can stay as they are. I serve it with plain rice, without another sauce on the table. Marinating is the part that’s easy to cut short; leave the breast in the fridge for at least an hour. Choose firm eggplants with shiny skin; very large ones may have flesh with lots of seeds. For the zucchini, look for one that’s firm and not too thick, without a soft center. Onion is recommended, although I didn’t use it in the original version; if you add it, slice it thinly. If the tomato is very juicy, remove the seeds before slicing it so the dish doesn’t collect too much liquid.
Frequently asked questions
Can I use chicken thighs instead of breast?
Yes, use 850 g boneless thighs and check that they reach 74°C at the thickest part.
What should I do if the eggplants taste bitter?
Peel them and leave the rounds for 20 minutes in 500 ml cold water with 1 teaspoon salt, then pat them dry.
Can I replace the bell pepper with kapia pepper?
Yes, use 120 g kapia pepper and slice it before placing it in the dish.
What should I do if the chicken slices are thick?
If they’re over 2 cm thick, check the center after baking and leave the dish in the oven for another 5 minutes if the slices aren’t done.
