Chicken livers with rice

Meat - Chicken livers with rice by Clementina F. - Recipia

Chicken livers with rice are browned only after the liquid has evaporated from the pan, over low heat. The rice with onion and pepper simmers until soft and creamy, and the soy sauce goes in at the end, after the pan is taken off the heat. I put the rice on the plate first and arrange the livers on top. Prep: 20 minutes. Cook: 58 minutes. Total time: 78 minutes. Serves: 4. About 690 kcal and 36 g protein per serving.

Ingredients

For the livers

  • 700 g chicken livers
  • 2 tablespoons oil
  • 1/2 teaspoon ground pepper
  • 2 tablespoons soy sauce

For the rice

  • 4 tablespoons oil
  • 1 medium onion (150 g)
  • 1 bell pepper (150 g)
  • 300 g rice
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 500 ml water
  • 15 g fresh parsley

Preparation

1. Trim the livers of membranes and fat, then pat them dry well with paper towels. Put them in a pan with 2 tablespoons oil, sprinkle with 1/2 teaspoon pepper and cook over low heat for about 30 minutes, turning them from time to time, until the liquid has evaporated and they are lightly browned. Everyone likes them done differently; I let them brown lightly, with no red center. 2. Turn off the heat, add 2 tablespoons soy sauce and cover the pan while you prepare the rice. 3. Peel and chop the onion and pepper. In a saucepan, sauté them in 4 tablespoons oil over low heat for 10 minutes, until softened. 4. Rinse the rice in cold water and drain it. Add it to the vegetables, then add 1 teaspoon salt and 1/2 teaspoon pepper. Stir continuously for 3 minutes, until the grains are coated in oil. 5. Pour in 500 ml cold water and simmer over low heat for 15 minutes, stirring from time to time and making sure it does not stick to the bottom of the pan. The rice is ready when the grains are soft. 6. Turn off the heat, sprinkle in the chopped parsley and stir.

Notes

Serve them with a simple green salad alongside the soft rice. Start the livers about 30 minutes before you prepare the rice; the pan can stay covered while the side cooks. Large livers may need more time than small ones, so choose pieces that are close in size so they brown evenly. Long-grain rice stays fluffier, while short-grain rice gets stickier. Regular soy sauce may contain gluten; for a gluten-free option, replace it with the same amount of certified gluten-free tamari. Cool leftovers promptly and store them in a sealed container in the fridge for up to 3 days.

Frequently asked questions

Can I use turkey liver?

Yes, replace the livers with 700 g turkey liver and cut the large lobes into pieces about 3 cm across; thick pieces cook more slowly.

How can I check that the livers are fully cooked?

Using a food thermometer, measure the center of a larger liver: it should reach 74°C.

What should I do if the rice has stuck to the bottom of the pan?

Take the pan off the heat and transfer the rice without scraping up the stuck layer. If the grains are still hard, add 30 ml hot water and cook for another 3 minutes.

Can I use frozen livers?

Thaw them for 12 hours in the fridge, then pat them dry well before putting them in the pan; ice crystals release water as they cook.
