Braised green beans with chicken

Braised green beans with chicken simmer in a tomato paste and sour cream sauce, with the beans cut into pieces and tender chicken breast nestled among them. I cut the beans into thirds and leave them soft but whole; the sauce reduces almost completely, and the dish can be served hot or cold without feeling heavy. Prep: 20 minutes. Cook: 36 minutes. Rest: 15 minutes. Total: 71 minutes. Serves: 4. About 225 kcal and 20 g protein per serving.
Ingredients
- 500 g fine green beans
- 1 medium onion (150 g)
- 1 medium carrot (100 g)
- 2 tablespoons oil
- 300 g chicken breast
- 500 ml water
- 1 teaspoon salt
- 1 tablespoon tomato paste
- 1 tablespoon sour cream
- 20% fat
- 2 cloves garlic
- 1/2 teaspoon ground pepper
Preparation
1. Take the sour cream out of the fridge 15 minutes before you start. Peel and chop the onion and carrot, wash the green beans and cut them into thirds. Pat the chicken breast dry with paper towels and cut it into cubes about 2 cm across. 2. Heat 2 tablespoons of oil in a pot and sauté the onion and carrot for 5 minutes, until softened. 3. Add the chicken cubes and sauté for 5 minutes, stirring, until they are no longer pink on the outside. 4. Pour in 500 ml of water and add 1/2 teaspoon of salt. Bring the liquid to a boil in about 5 minutes. 5. Add the green beans and the remaining 1/2 teaspoon of salt. Simmer uncovered for 20 minutes, until the beans are tender and almost all the liquid has reduced. 6. Mix the tomato paste, crushed garlic and pepper. Stir a few spoonfuls of the hot sauce into the sour cream to temper it, then stir it into the pot and cook for 1 more minute over low heat, without letting it boil hard.
Notes
Keeps for up to 3 days in the fridge in a sealed container; when reheating, add 1-2 tablespoons of water if the sauce has thickened. Serve with bread to mop up the remaining sauce. You can use 500 g of frozen green beans, adding them straight to the pot; check if they are tender a few minutes earlier. Young beans cook faster than thick ones, while older beans may need a few extra minutes. Sour cream from the deli counter keeps the sauce looking smooth; tub sour cream can look uneven, and the dish contains dairy.
Frequently asked questions
Can I use chicken thighs?
Yes. Cut 300 g of boneless chicken thighs into 3 cm cubes and simmer them for 25 minutes before adding the green beans.
Will yellow beans work too?
Yes, use 500 g and cut the beans into pieces about 4 cm long.
What should I do if the sauce is too runny?
Simmer the green beans uncovered for another 4-5 minutes before adding the tomato paste and sour cream.
Can I leave out the sour cream?
Yes, leave it out and add 1 more tablespoon of tomato paste; the sauce will stay redder and won’t have the sour tang of the sour cream.
