Sprinkle grated mozzarella along the thigh, ensuring not to overdo it so that it doesn’t spill out during baking. Then add a piece of sausage that does not exceed the size of the thigh. With great care, bring the ends of the thigh together to recreate the original shape. Make sure the filling is well sealed, and to prevent it from coming apart, secure the thighs with toothpicks. Once you have finished filling and securing the thighs, place them in a baking dish.
