In a frying pan, add a tablespoon of oil and sauté the finely chopped onion along with the grated carrot. Heat them over medium heat, stirring constantly, for a few minutes until the onion becomes translucent and the carrot softens. This vegetable base will add a savory flavor to the filling. Meanwhile, take the rice and wash it in several waters until the water runs clear. This step is essential to remove excess starch that could make the rice sticky. After washing, let it soak in hot water for about 10 minutes. Then, combine the rice with the onion and carrot mixture, adding minced beef or pork, depending on your preference. Season with salt and pepper to taste, then add fresh herbs like parsley or dill for extra flavor. Once you have prepared the filling, scoop out the center of the zucchinis using a spoon or a knife, being careful not to damage their walls. Fill each half of the zucchini with the meat and rice mixture, pressing gently to compact the filling.
